Baked Potato Soup

My mom use to make a potato soup when I was a kid and I got hungry for it.  :)  I asked but she said she didn't know where the recipe went.  So this is my version.  Turned out pretty good.  All the picky kids ate it.  LOL

INGREDIENTS:

2/3 cup butter

2/3 cup flour

2 cups milk

6 cups of chicken broth (or 6 cups of water and 6 tsp. of chicken bouillon)

4 large baking potatoes, baked, cooled, peeled and cubed, about 4 cups

4 green onions, thinly sliced

1pkg of bacon, cooked, drained, and crumbled

1 1/4 cups shredded mild cheddar cheese

1 cup (8 ounces) sour cream

1/2 teaspoon pepper

 

PREPARATION:

In a large Dutch oven or stockpot over medium heat, melt butter and cook onion till tender.

Stir in flour with whisk; stir until smooth and bubbly. Gradually add milk, stirring constantly, until sauce has thickened.

Add potatoes. Continue to cook, stirring constantly, until soup begins to bubble.

 

Reduce heat; simmer gently for 10 minutes. Add remaining 5 ingredients; stir until cheese is melted. Serve baked potato soup immediately.

This baked potato soup recipe serves 6 to 8

 

Might try just frying the bacon and onion together and using the grease instead of the butter.

Yam Bread

Tabor City Yam Bread  is from the kitchen of Four Rooster Inn Tabor City, North Carolina.  A gal brought it for our last Cooking club.  It was Great!

Preheat oven to 350 degrees.  Butter 8x8 loaf pan or 12 muffin cups

Blend together until creamy
6 Tbsp. butter
1 c. sugar

Beat in thoroughly:
2 eggs  

Add to this:
1 c. cooked and mashed sweet potatoes  

Sift together:
1/4 tsp. cloves
1/2 tsp. salt
1/4 tsp. soda
1/2 tsp. nutmeg
2 c. flour
2 tsp. baking powder
1/4 tsp. cinnamon 

To wet mixture, add dry ingredients alternately with:
1/3 - 1/2 c. milk
1/2 c. nuts

Pour into loaf pan and bake for 50-55 minutes.  Top with caramel icing if desired.  Freezes well.  Microwave to reheat.  May also be baked in lined muffin tins at 400 degrees for 15-20 minutes or, in madeline pan at 400 degrees for 10 minutes.

I just made this today.  It turned out great.  :)
