Baked Potato Soup

My mom use to make a potato soup when I was a kid and I got hungry for it.  :)  I asked but she said she didn't know where the recipe went.  So this is my version.  Turned out pretty good.  All the picky kids ate it.  LOL

INGREDIENTS:

2/3 cup butter

2/3 cup flour

2 cups milk

6 cups of chicken broth (or 6 cups of water and 6 tsp. of chicken bouillon)

4 large baking potatoes, baked, cooled, peeled and cubed, about 4 cups

4 green onions, thinly sliced

1pkg of bacon, cooked, drained, and crumbled

1 1/4 cups shredded mild cheddar cheese

1 cup (8 ounces) sour cream

1/2 teaspoon pepper

 

PREPARATION:

In a large Dutch oven or stockpot over medium heat, melt butter and cook onion till tender.

Stir in flour with whisk; stir until smooth and bubbly. Gradually add milk, stirring constantly, until sauce has thickened.

Add potatoes. Continue to cook, stirring constantly, until soup begins to bubble.

 

Reduce heat; simmer gently for 10 minutes. Add remaining 5 ingredients; stir until cheese is melted. Serve baked potato soup immediately.

This baked potato soup recipe serves 6 to 8

 

Might try just frying the bacon and onion together and using the grease instead of the butter.
